I have a new favourite recipe!! A really simple one. But let me start from the beginning.

We have been considering for a while to buy a waffle maker because of this video of La Dimensión Vegana.  Oat flakes, agave syrup and water, as easy as that. So simple and tasty! (Thanks Javi, you are our inspiration!!)

But my colleagues’ were faster and gave me a waffle machine as a present for my birthday. One of the best presents I have ever had!!! Since then, we’ve been experimenting almost every day. You cannot go wrong with any mix of the above three, but I found the below recipe the most tasty.

VEGAN OAT WAFFLES

Ingredients (for 10-12 waffles):

  • 5 cups of (gluten-free) oat flakes
  • 2 cups of warm water
  • 1 cup of vegan milk
  • 5-6 tbsp of agave syrup
  • 4 tbsp of oil
  • 1 tsp of salt
  • 1 tsp of chia (optional)
  • 1/2 tsp of baking soda

Preparation time: 5 minutes + baking

Secret tip: Add 1/2 tsp of cinnamon.

Mix all ingredients in a mixer. Bake the dough. With our waffle maker we use about 2 tbsp of dough for a waffle and it takes ca. 5 minutes to get crispy from the outside and soft from the inside.

I’m really satisfied with the result.

These waffles have become part of our weekly routine. We also experimented with adding nuts or fruits, that also works perfectly.

Please note, the amount of liquids needed varies, depending on the oat flakes. The dough should be approximately as thick as a muffin dough. But don’t worry, it’s really hard to mess up this recipe.

The best thing is that you can eat these waffles free of guilt!! All ingredients are healthy – and the topping depends on you, really. Some of my (not so healthy but spectacular) creations:

Fit for a smoothie?

We had some leftover parsley stems from this recipe and Abel made mind-blowing smoothie out of it.


FIT SMOOTHIE FIT

Ingredients (for 2 glasses of smoothie):

  • 2.5 cups of orange (juice)
  • 1.5 cups of grapefruit (juice)
  • 2/3 cups of fresh parsley (stems in our case) and celery leaves
  • 2 tbsp of honey (or Agave syrup)
  • ice cubes

Preparation time: 5 minutes

Blend and enjoy the kick!

For decoration I chose to sacrifice our favourite chili from the balcony. I actually imagine it to taste good mixed into the smoothie as well.

Yeast spread with oat flakes…

Abel loves this spread and since the birth of our blog he has been asking me to post the recipe.

Well, here it is. I learned it from my Mother and I try to pass it on exactly the same way.


 

YEAST SPREAD

Ingredients:

  • 1/2 tbsp (about 10g) of fresh yeast
  • 1/2 cup of oat flakes
  • 3/4 cup of hot water
  • 1 clove of garlic (pressed)
  • 3/4 tsp of salt
  • a pinch of: black pepper, paprika powder and turmeric
    optionally a little nutmeg or marjoram
  • about 3 tbsp of oil for frying
  • a handful of chopped parsley

Preparation time: 10 minutes

Heat oil and fry onions. After a 2-3 minutes, add oat flakes. In the meantime dissolve yeast in hot (!) water and add it to the pan. Stir until the liquid evaporates. Add all spices at the end. Sometimes I also add a little piece of butter or margarine to make it more creamy.

We often eat it on a cold Sunday morning for breakfast. Believe me, it tastes a lot better than it sounds! ;)
