Real Vegan Scrambled Eggs

Subtitle could be ‘A comfort-breakfast without smoothies’.

Now that we survived the one week on smoothies, we are slowly getting back to our normal diet. Yesterday we already had some Chinese fried vegetables and rice for dinner, and today I asked my dear one what we should have for breakfast. “Ham & Eggs”, he said, and looked at me with his grin of a 5-year-old hungry child.

So ham and eggs it was. We ordered some vegan ham from an online shop, and it turned out to be quite good. My chico became a big fan of it. And I made some scrambled eggs out of tofu, with onions and tomato. “Exactly as the real huevos revueltos“, Abel said. I haven’t eaten eggs for more than 20 years now but I do believe he’s right. Do you want to know the trick?

It’s Kala Namak, the black salt from the Himalayas. It has a sulphureous smell and taste, which resembles to a surprising extent to real eggs.


VEGAN SCRAMBLED EGGS

Ingredients (for 2)

  • 1 package (350 g) of plain tofu
  • 1 medium onion
  • 1 big ripe tomato
  • 1 tsp kala namak
  • 3/4 tbsp soy sauce
  • a pinch of pepper
  • 1/4 tsp kurkuma (I often use kurkuma when I want to fake egg-colour)
  • 1 big clove of garlic (chopped)
  • 2 tbsp oil for frying
  • some chives chopped to decorate

Preparation time: 8 minutes

Fry the onions and the chopped garlic, add the tomato and the tofu and keep frying it until it has the wished texture.
It smelled so good that I couldn’t help the first bite before the photo. Sorry for that! =)

7 Day Smoothie Challenge – Day 7

I tried to make every day a completely different smoothie, however, by today we have been a little fed-up with all the sweet fruits… Luckily my friend Ainhoa from Companniers, who is cycling now around the world with her hubby and will soon arrive to Munich (woohoo!); told me about the green version of gazpacho.

A salty relief in our smoothie challenge!


 

Day #7 – GAZPACHO VERDE, as we like it

Ingredients (1.2 liter)

  • 2 tomatos
  • 1 green granny apple
  • 1/2 cucumber (about 20 cm)
  • 1 avocado
  • 1/2 green bell pepper
  • 1 cup of spinach leaves
  • 1/2 cup of mixed sprouts
  • 3 tbsp oat flakes
  • 1 big clove of garlic
  • 3-4 leaves of basil
  • 1/2 of a small onion
  • 1 tbsp vinagre or 2 tbsp lemon juice
  • some pepper
  • 1/2 tbsp of salt (or according to taste)
  • 1 tbsp olive oil
  • 1/2 cup of water

Preparation time: 10 minutes

Serve chilled!

We altered the original recipe a bit according to our dietary needs but it was really tasteful and refreshing!

7 Day Smoothie Challenge – Day 6

Ooops, we lag a little behind with the blog… But in the exciting times of the Chile-Brasil and the Columbia-Uruguay games you might apologize this. Now comes the smoothie that has been Abel’s favourite so far.


Day #6 – ABEL’S BEETROOT SMOOTHIE

Ingredients (1.2 liter)

  • 2 cups of sweet cherries
  • 1 smaller beetroot
  • 1/2 cup of hazelnuts
  • 1 big apple
  • 1 banana
  • 1/2 cup of broccoli
  • 1 cup of beetroot leaves

It will have a lovely colour! Like this:
